Crispy, triangular pastries filled with spiced beef, similar to samosas, popular during Ramadan or festive occasions.
Ingredients
- Filling:
- ½ lb (225g) ground beef
- 1 small onion, finely chopped
- 1 tablespoon xawaash (or mix: 1 tablespoon cumin, ¼ tablespoon coriander, pinch of turmeric)
- 1 tablespoon salt
- 1 tablespoon cilantro, chopped
- Dough:
- 2 cups all-purpose flour
- ½ tablespoon salt
- ¾ cup water
- 2 tablespoons vegetable oil
- Oil for frying
Preparation (1 hour):
- Make filling: Cook beef and onion in a pan over medium heat until browned (8 minutes). Add xawaash, salt, and cilantro. Cool.
- Make dough: Mix flour, salt, water, and oil. Knead until smooth (5 minutes). Divide into 12 balls. Roll each into a thin circle.
- Assemble: Place 1 tablespoon filling in the center of each circle. Fold into a triangle, sealing edges with water.
- Fry: Heat 2 inches of oil to 350°F (175°C). Fry sambuus for 2-3 minutes per side until golden. Drain on paper towels.
- Serve: Serve with basbaas cagaar.
