Ingredients:
- 1 ½ cups basmati rice, rinsed
- 2 ½ cups chicken broth or water
- 1 lb beef, chicken, or goat, cubed
- 1 onion, chopped
- 2 tomatoes, diced
- 2 tablespoons vegetable oil
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- ½ tablespoon ground cinnamon
- ¼ cup raisins (optional)
- Salt and pepper to taste
Preparation:
- Cook meat: Heat oil in a large pot over medium heat. Add meat, season with salt and pepper, and brown for 5-7 minutes. Remove and set aside.
- Sauté: In the same pot, sauté onion until golden. Add tomatoes, cumin, coriander, and cinnamon. Cook 3 minutes until fragrant.
- Cook rice: Add rice, broth, raisins (if using), and browned meat. Bring to a boil, then reduce to low, cover, and simmer for 15-20 minutes until rice is fluffy.
- Serve: Fluff with a fork and serve with a side of salad or maraq.
