Ingredients:
- 1 lb beef, chicken, or mixed vegetables (e.g., carrots, zucchini, potatoes)
- 1 onion, chopped
- 2 tomatoes, diced
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 2 tablespoons vegetable oil
- 4 cups water or broth
- Salt and pepper to taste
- Optional: Fresh cilantro for garnish
Preparation:
- Sauté: Heat oil in a pot over medium heat. Sauté onion until soft. Add tomatoes, coriander, and cumin; cook 3 minutes.
- Cook soup: Add meat or vegetables, water or broth, salt, and pepper. Bring to a boil, then simmer 20-25 minutes until meat is tender or vegetables are soft.
- Serve: Garnish with cilantro and serve with canjeero or bariis.
