Wali wa nazi is coastal coconut rice, fragrant and slightly sweet, a Swahili staple for supper.
Ingredients
Rice (2 cups)
Coconut milk (2 cups)
Water (2 cups)
Salt (1 tablespoon)
Preparation
Rinse rice until water runs clear.
In a pot, combine coconut milk, water and salt; bring to a boil.
Add rice, stir, reduce heat, cover and simmer for 15-20 minutes until rice is cooked and liquid absorbed.
Fluff with a fork.
Serve with fish or kuku paka.
