Uji is fermented porridge from millet, sorghum, or maize, often sweetened, a nutritious rural breakfast.
Ingredients
Millet or sorghum flour (1/2 cup)
Water (2 cups)
Sugar (2 tablespoons, optional)
Lemon juice (1 tablespoon for fermentation)
Preparation
Mix flour with 1/2 cup water to form a paste.
Add to 1.5 cups boiling water, stirring to avoid lumps.
Cook on low for 10-15 minutes until thick.
For fermented uji, mix paste with lemon juice, let sit overnight, then cook.
Sweeten if desired.
Serve warm.
