Pilau is coastal spiced rice with meat or chicken, aromatic with pilau masala, a Swahili favorite.
Ingredients
Rice (2 cups)
Beef or chicken (300g, cubed)
Onion (1, sliced)
Tomatoes (2, diced)
Pilau masala (1 tablespoon, mix of cumin, cardamom, cinnamon)
Garlic (2 cloves, minced)
Oil (3 tablespoons)
Water or stock (4 cups)
Salt (1 tablespoon)
Preparation
Heat oil in a pot, sauté onion until golden, add garlic and pilau masala, cook 1 minute.
Add meat, brown for 5 minutes, then add tomatoes, cook 5 minutes.
Stir in rice, add water and salt, bring to a boil.
Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
Serve with kachumbari.
