Nyama choma

Nyama choma is grilled meat (goat, beef or chicken), slow-cooked over charcoal, a social dish often served at gatherings.

Ingredients

Goat or beef (1 kg, cut into chunks)

Salt (1 tablespoon), oil (2 tablespoons)

Optional black pepper (1 tablespoon)

Preparation

Season meat with salt, pepper, and oil; let sit for 30 minutes (optional).

Skewer or place on a wire mesh grill over hot charcoal.

Grill for 20-30 minutes, turning occasionally, until browned and cooked through.

Serve with ugali and kachumbari (tomato-onion salad).
