Ndengu is mung bean stew, a nutritious vegetarian dish, often spiced and creamy, popular across Kenya.
Ingredients
Mung beans (1 cup, soaked 4 hours)
Onion (1, chopped)
Tomato (1, diced)
Coconut milk (1/2 cup, optional)
Garlic (2 cloves, minced)
Curry powder (1/2 tablespoon)
Oil (2 tablespoons)
Salt (1 tablespoon)
Water (2 cups)
Preparation
Boil soaked mung beans in 2 cups water with salt for 30-40 minutes until soft; drain.
Heat oil in a pan, sauté onion and garlic until soft, add tomato and curry powder, cook 5 minutes.
Add beans, coconut milk (if using) and 1/2 cup water; simmer 10-15 minutes until thickened.
Serve with chapati or rice.
