Mukimo is Kikuyu mashed dish of potatoes, maize, peas and greens, hearty and comforting.
Ingredients
Potatoes (4 medium, peeled)
Fresh maize (1 cup, off the cob)
Green peas (1 cup)
Pumpkin leaves or spinach (1 cup, chopped)
Water (3 cups), salt (1 tablespoon)
Butter (1 tablespoon, optional)
Preparation
Boil potatoes, maize and peas in salted water for 20-25 minutes until soft.
Add greens, cook 5 minutes.
Drain slightly, mash together until smooth, adding butter if desired.
Serve hot with beef stew or nyama choma.
