Mkate wa sinia is coastal rice cake, soft and slightly sweet, baked in a pan for breakfast or snacks.
Ingredients
Rice flour (1 cup)
Coconut milk (1 cup)
Sugar (1/4 cup)
Yeast (1/2 tablespoon)
Cardamom (1/4 tablespoon).
Preparation
Dissolve yeast in 1/4 cup warm coconut milk with a pinch of sugar; let sit 5 minutes.
Mix rice flour, sugar and cardamom.
Add yeast mixture and remaining coconut milk to form a batter.
Let rise for 1 hour.
Pour into a greased round pan, bake at 350°F for 25-30 minutes until set.
Slice and serve with chai.
