Ingredients
1 can garbanzo beans, rinsed and drained
2⁄3 cup plain yogurt
¼ cup red pepper, chopped
2 tablespoons fresh mint,finely chopped
1 garlic clove, minced
½ teaspoon ground cumin
1/8 teaspoon cayenne pepper
4 standard size pita breads
Torn romaine leaves
2/3 cup feta cheese, crumbled
How to prepare
Cook time about 2 hours
1. Mash garbanzo beans in small bowl with fork until somewhat pasty, but still chunky.
2. Combine yogurt, red pepper, green onion, mint, garlic, cumin, and cayenne with beans.
3. Cover and chill mixture for at least 2 hours to blend flavor.
4. Bring to room temperature before serving.
5. Cut pitas in half vertically to form pockets.
6. Line the pita halves with torn romaine leaves and sprinkle feta inside, dividing evenly among pitas.
7. Spoon bean mixture into pitas.
8. Serve.
