Matoke

Matoke is green banana stew, cooked with tomatoes and spices, popular in East Africa, especially among the Luhya.

Ingredients

Green bananas (6, peeled)

Onion (1, chopped)

Tomatoes (2, diced)

Garlic (2 cloves, minced)

Oil (2 tablespoons)

Curry powder (1/2 tablespoon)

Water (1 cup)

Salt (1 tablespoon)

Preparation

Peel and slice green bananas.

Heat oil in a pot, sauté onion and garlic until soft.

Add tomatoes and curry powder, cook 5 minutes.

Add bananas, water, and salt, stir gently.

Simmer for 20-25 minutes until bananas are soft and sauce thickens.

Serve with ugali or rice.
