Maharage ya nazi are kidney beans in coconut milk, a creamy Swahili dish from the coast, rich and flavorful.
Ingredients
Kidney beans (1 cup, soaked overnight)
Coconut milk (1 cup)
Onion (1, chopped)
Tomato (1, diced)
Garlic (2 cloves, minced)
Turmeric (1/2 tablespoons)
Oil (2 tablespoons)
Salt (1 tablespoon)
Preparation
Boil soaked beans in 3 cups water with salt for 45-60 minutes until tender; drain.
Heat oil in a pan, sauté onion and garlic until soft, add tomato and turmeric, cook 5 minutes.
Add beans, coconut milk, and 1/2 cup water; simmer 10-15 minutes until creamy.
Serve with chapati or wali wa nazi.
