Mahamri

Mahamri is a Kenyan coastal fried bread, similar to mandazi but richer with coconut and cardamom, often triangular.

Ingredients

All-purpose flour (2 cups)

Coconut milk (3/4 cup)

Sugar (1/4 cup)

Yeast (1 tablespoon)

Cardamom (1/2 tablespoon)

Oil for frying.

Preparation

Dissolve yeast in 1/4 cup warm coconut milk with a pinch of sugar; let sit 5 minutes.

Mix flour, sugar, and cardamom.

Add yeast mixture and remaining coconut milk to form a soft dough.

Knead for 5 minutes, let rise for 1 hour.

Roll out to 1/4-inch thickness, cut into triangles. Fry in hot oil (350°F) for 2-3 minutes per side until puffed and golden.

Serve warm.
