Kuku paka is coastal Swahili chicken curry with coconut milk, featuring grilled chicken in a creamy, spiced sauce.
Ingredients
Chicken (500g, cut into pieces)
Coconut milk (1 cup)
Onion (1, chopped)
Tomatoes (2, diced)
Garlic (2 cloves, minced)
Ginger (1 tablespoon, grated)
Turmeric (1/2 tablespoon)
Chili powder (1/2 tablespoon)
Oil (2 tablespoons)
Salt (1 tablespoon)
Preparation
Grill or sear chicken pieces for 5-7 minutes until browned; set aside.
Heat oil in a pan, sauté onion, garlic and ginger until soft.
Add tomatoes, turmeric and chili powder, cook 5 minutes.
Stir in coconut milk and salt, add chicken, simmer for 20-25 minutes until sauce thickens.
Serve with rice or chapati.
