Kenyan beef stew

This is a rich, savory stew with beef, tomatoes and vegetables, flavored with spices or mchuzi mix.

Ingredients

Beef (500g, cubed)

Onion (1, chopped)

Tomatoes (2, diced)

Carrots (2, chopped)

Garlic (2 cloves, minced)

Oil (2 tablespoons), mchuzi mix or curry powder (1 tablespoon)

Salt (1 tablespoon)

Water (1 cup)

Preparation

Heat oil in a pot, brown beef for 5-7 minutes, remove.

Sauté onion and garlic until soft, add tomatoes and mchuzi mix, cook 5 minutes.

Return beef, add carrots, water and salt.

Simmer for 45-60 minutes until beef is tender and stew thickens.

Serve with ugali or rice.
