Kachumbari

Kachumbari is fresh salad of tomatoes, onions and chili, a vibrant side for grilled meats or stews.

Ingredients

Tomatoes (2, diced)

red onion (1, thinly sliced)

green chili (1, chopped)

coriander (2 tablespoons, chopped)

lemon juice (1 tablespoon)

salt (1/2 tablespoon).

Preparation

Combine tomatoes, onion, chili and coriander in a bowl.

Add lemon juice and salt, toss well.

Let sit for 5-10 minutes to meld flavors.

Serve fresh as a side with nyama choma or pilau.
