Githeri is a Kikuyu dish of boiled maize and beans, sometimes fried with onions and spices for added flavor, popular as a hearty meal.
Ingredients
Dried maize (1 cup)
Kidney beans (1 cup)
Onion (1, chopped)
Tomato (1, diced)
Oil (2 tablespoons)
Salt (1 tablespoon)
Curry powder (1/2 tablespoon, optional)
Preparation:
Soak maize and beans overnight.
Boil together in 4 cups water with salt for 1-2 hours until tender; drain.
For fried githeri, heat oil in a pan, sauté onion until golden, add tomato and curry powder, cook 5 minutes.
Add boiled maize and beans, stir-fry for 10 minutes.
Serve warm as a main or side dish.
