Chips mayai is street-food Kenyan omelette with French fries mixed in, a hearty breakfast or snack.
Ingredients
Eggs (3)
French fries (1 cup, pre-cooked)
Onion (1/4, chopped)
Tomato (1/4, diced)
Oil (2 tablespoons)
Salt (1/2 tablespoon)
Preparation
Heat oil in a pan, sauté onion and tomato for 3 minutes.
Add fries, spread evenly.
Beat eggs with salt, pour over fries.
Cook on medium for 3-4 minutes until set, flip to cook other side for 1-2 minutes.
Serve with kachumbari or ketchup.
