Boiled nduma (Arrow roots)

Nduma are arrow roots, a starchy, nutritious breakfast in rural Kenya, especially among the Kikuyu.

Ingredients

Arrow roots (4 medium)

Water (4 cups)

Salt (1/2 tablespoon).

Preparation

Peel arrow roots and cut into chunks.

Place in a pot with water and salt. Boil for 20-30 minutes until tender (test with a fork).

Drain and serve plain or with chai.
