Ugali is Kenya’s national dish, a dense maize flour porridge, stiff and starchy, used to scoop stews or vegetables.
Ingredients
Maize flour (1 cup)
Water (2 cups)
Salt (pinch, optional)
Preparation
Boil water in a pot with a pinch of salt.
Gradually add maize flour while stirring to avoid lumps.
Cook on medium heat, stirring continuously for 5-10 minutes until thick and smooth.
Reduce heat, cover, and steam for 2-3 minutes.
Shape into a round or slice and serve hot with stew or sukuma wiki.
