Mandazi is a slightly sweet, deep-fried doughnuts, triangular or round, popular as a breakfast or snack item.
Ingredients:
All-purpose flour (2 cups)
Sugar (1/4 cup)
Baking powder (2 tablespoon)
Coconut milk (1/2 cup)
Egg (1)
Cardamom (1/2 tablespoon)
Oil for frying.
Preparation
Mix flour, sugar, baking powder and cardamom.
Beat egg into coconut milk, then combine with dry ingredients to form a soft dough.
Knead lightly, roll out to 1/4-inch thickness, cut into triangles.
Fry in hot oil (350°F) for 2-3 minutes per side until golden.
Drain on paper towels.
Serve with chai.
